A look at the spread of cacao production and chocolate making on nearly every continent, with special attention to our own where chocolate has had a cultural role since 1400 BCE. Most everyone has gotten their fingers into chocolate - Olmecs, Mayans, Aztecs, Columbus, Cortez, and the Turks, Dutch, British, French, Belgians and Sir Hershey. We’ll taste a range of chocolates, in various levels of cocoa concentration, and I’ll help you learn not only what chocolate does to you but what you can do to chocolate to make it even tastier. Dinner: Oaxacan mole negro and mole Coloradito over pork.
