Next time you see these homely guys at the market, don't keep walking past them, and don't be intimidated. Stop and give them the respect they deserve...maybe even invite them to dinner! Salsify is a delicious root vegetable that can be prepared much like any other root vegetable. We particularly like ours roasted and tossed with a little Irish butter, salt, pepper and parsley. Make sure to peel the outer skin and keep what is peeled in acidulated water until ready to use, as it has a tendency to oxidize quickly. Not only will you see Salsify appearing in our March issue, it is likely to be on the menus of many of our top restaurants this season.
