This is not your traditional pecan pie. With only seven simple ingredients it comes together in a jiff and is always a crowd pleaser. You might never go back to that other pecan pie recipe again.

Prep time: 30 minutes
Cook time: 30 minutes + 2 hours for chilling
3 egg whites
½ teaspoon baking powder
1 cup sugar
½ teaspoon vanilla
1½ cups chopped pecans
11 whole graham crackers, broken into crumbs (we use a food processor)
For topping: fresh whipped cream
Preheat oven to 350° F. Beat egg whites and baking powder until stiff peaks form. With mixer on high, slowly add the sugar. Add the vanilla. Slowly add in the cracker crumbs. Using a wooden spoon, fold in the pecans. Pour into a well-greased 9-inch pie plate and bake for 30 minutes. Cool, then top with fresh whipped cream. Refrigerate pie for 2 hours before serving.
