Café Aion

Café Aion is your favorite kind of restaurant: off the beaten path, with a variety of food and unmistakable charm. In 2012, Owner and Chef Dakota Soifer opened this Spanish-inspired restaurant on The Hill in Boulder. The kitchen serves classic Spanish tapas like crispy fried cauliflower, seasonal hummus and Spanish olives, but their most famous dish is paella. In 2020, Dakota started Brasserie Boulder, a ghost kitchen. Their classic French dishes were in such demand he added them permanently to his Café Aion menu in 2021. Now, beginning April 4 for the first time since 2019, Café Aion will be open for lunch, serving a delicious mix of French and Mediterranean-inspired dishes. Ideal for quiet business lunch meetings. Start with the hummus topped with seasonal veggies and dive headfirst into the salmon niçoise salad or chicken shawarma sandwich.

Postino WineCafé

Opening in late March 2023, Postino WineCafé is primed to be the ultimate wine bar in Boulder. Perfect for a crowd, date night or quick stop while shopping down Pearl Street, Postino makes having a glass of wine and a delicious bite accessible and chic. Famous for its award-winning wine program, Postino serves an ever-changing selection of boutique wines—including more than 30 varietals by the glass. They also offer tap beers from Colorado breweries such as Odell, Ratio Beerworks, Left Hand, Oskar Blues and Upslope. Postino’s menu includes a bountiful selection of must-have bruschetta, charcuterie boards, from-scratch soups, fresh salads and panini sandwiches. For shareable bites, the menu features Snacky Things, such as the OMG Grilled Cheese served up with a piping hot and creamy tomato soup dip, butter-poached shrimp scampi, sweet potato wedges, and more.

Rosetta Hall

Boulder’s first food hall, Rosetta Hall, is where Boulder meets up and hangs out. Rosetta Hall is a collective of food stalls—some permanent, some rotating—each offering a unique perspective on traditional dishes and tempting your senses with aromatic flavors that complement each other in unexpected ways. With a focus on global cuisine, experience tastes of the Middle East, Italy, Thailand, China, Latin America and New American as you create a table of dishes to share among friends. On their rooftop, in the main dining hall or over drinks at the bar, Rosetta Hall makes every dining experience unforgettable. Come nightfall, the rooftop comes to life with music, curated cuisine and crisp cocktails. It’s the perfect place for a long, lingering evening out.
