Heat your grill to approximately 450–500°F.
Divide ground bison into 4 balls; flatten them into patties.
Season both sides with salt and pepper.
Prepare the bacon, if using.
If using a skillet or griddle, add 1 tablespoon of oil and heat oil before adding the burgers.
Sear the burgers for 3–4 minutes per side then cook them to the desired temperature.
Add the cheese and cook until melted. Top with bacon.
Place patties on toasted buns.
Serve with garnishes of lettuce, sliced onion, sliced tomato and sweet pickles.
