Classic Colorado Bison Burger

Ingredients
  

  • 1 pound ground bison
  • Salt and pepper to taste
  • 1 tablespoon oil optional
  • 4 slices cheddar cheese optional
  • 8 slices applewood-smoked bacon optional
  • 4 burger buns or brioche
  • For garnish: lettuce, tomato, onion, sweet pickles, as desired

Instructions
 

  • Heat your grill to approximately 450–500°F.
  • Divide ground bison into 4 balls; flatten them into patties.
  • Season both sides with salt and pepper.
  • Prepare the bacon, if using.
  • If using a skillet or griddle, add 1 tablespoon of oil and heat oil before adding the burgers.
  • Sear the burgers for 3–4 minutes per side then cook them to the desired temperature.
  • Add the cheese and cook until melted. Top with bacon.
  • Place patties on toasted buns.
  • Serve with garnishes of lettuce, sliced onion, sliced tomato and sweet pickles.
