
Sweet Summer Salad
Course Salad
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon honey plus more to taste
- 2 tablespoons lime juice plus more to taste
- 1 pinch sea salt
- Black pepper to taste
- 2 cups cubed fresh cantaloupe
- 2 cups cubed fresh seedless watermelon
- 1 cup diced cucumber
- 2/3 cup chopped feta cheese
- 2 tablespoons chopped shallots
- 1 bunch fresh mint: chop 1½ tablespoons and use the rest for garnish
Instructions
- Mix the olive oil, vinegar, honey, lime juice, salt and pepper in a large mixing bowl.
- Add the melons, cucumber, cheese, shallots and chopped mint, and toss.
- Arrange on a colorful platter.
- Top with whole mint leaves. Chill until ready to serve.
